I love to get this cucumber salad in Japanese restaurants as an appetizer before sushi :) Making the cucumber sesame salad yourself costs a fraction of what you pay in a restaurant! The restaurants serve you a puny bowl for around $5… you can get enough cucumbers to feed a crowd for this much! Since the cucumbers are sliced so thin in this salad, one cucumber really goes a long way!

I like to make this cucumber sesame salad spicier than a typical restaurant version. They just sprinkle a few red pepper flakes mainly for the show and you can barely taste them. Since you are the one making the salad, you can control how much pepper you are getting and how much sesame too! I like to be generous with the red pepper flakes and sesame seeds because that’s exactly how I like it – spicy and crunchy! When you make food yourself, you are the boss!

This spicy Asian cucumber sesame salad is super easy to make. All you need to do is slice the cucumbers as thin as possible, then dress with a simple dressing and sprinkle with red pepper flakes and sesame to taste. If you have a mandoline slicer, this would be a good time to put it to use. If not, just use the knife and slice the cucumbers as thin as you can. I own a mandoline but was too lazy to take it out, so I used the knife – that’s why my slices on the pic are not as thin as they could have been, but who cares :)

Another great thing about this cucumber sesame salad is that you can make it as few hours ahead. Most salads have to be eaten immediately, but this salad actually benefits from a few hours of marinating. If not eating right away, just cover and put in a refrigerator, so the dressing will truly permeate the cucumber slices, yum!

FAQs

How do you keep cucumber salad from getting soggy? ›

Happily, salting cucumbers requires only 20 minutes or so and virtually no effort: You just put them in a colander or strainer, toss them with a big pinch of salt or two — the exact quantity doesn't matter, since most of the salt will flow away with the liquid — and let osmosis do its thing.

How do you make cucumbers crispy again? ›

The method is simple: Simply slice them lengthwise into wedges and place them in a jar or tall glass standing upwards. Fill the jar with water all the way to the top of the cucumbers and stick the jar in the fridge. After about a day or so, you should notice the cucumber slices have become crisper than before.

How do you salt cucumbers before salad? ›

How to Salt Cucumbers. Wash the cucumbers, peel if desired, and cut into the shape you need. Place in a bowl and toss with enough kosher salt to coat evenly (approximately 1/2 to 1 teaspoon per pound). Transfer to a colander set over a bowl or sink and let sit for 30 minutes.

Why does my cucumber go soggy in the fridge? ›

Storing cucumbers below fifty degrees Fahrenheit can cause chilling injuries, such as mushy spots and faster spoilage. If you cannot store cucumbers in the crisper drawer, store them in the warmest part of the fridge, toward the front.

Why is my cucumber salad so runny? ›

When it comes to making the best cucumber salads, I find that unless you take the time to properly salt and drain the cukes, the end product is watery, limp, and less than tasty. This easy extra step makes extra crunchy slices, takes almost no effort at all, but gives a big payout in the crunch department.

Rinse the cucumbers with water to remove the salt and pat them dry. The result will be a crisper and tastier cucumber.

Why is my cucumber not crunchy? ›

Like zucchini and watermelon, cucumbers have a high water content, making them supremely refreshing. But if not stored properly, the watery fruits will become soft, squidgy, and limp (and nobody likes a limp cucumber).

Which cucumber is best for salad? ›

Persian Cucumbers

They have a mild flavor and thin skins, so they're great sliced or chopped for salads and snacking, or even tossed in the blender to make a Spicy Cucumber Margarita. And because they're available year-round, Persian cukes are another good choice for pickling.

Should cucumbers be peeled for salads? ›

Should you peel your cucumbers for cucumber salad? Again, it depends on the variety and maturity of the cucumber. English or Persian cucumbers have thin skins which you do not need to peel. Regular market cucumbers may have thicker peels that can be tough and bitter, so it's best to peel those.

Should I rinse cucumbers after salting them? ›

After the cucumbers have been salted for a period of time, you'll want to rinse off the excess salt. At this point, you may be thinking 'what the hell, I just spent all this time removing the water! ' When we salt vegetables we're actually weakening the cell walls and therefore changing the integrity of the cucumber.

How long do you rinse cucumbers after salting? ›

Sprinkle each half with about 1/4 teaspoon of salt, then place them in a colander. Let drain for about 30 minutes. Rinse lightly, and drain again. Cut into 1/8-to- 1/4-inch-thick slices and place in a bowl.

How do you store cucumbers so they stay crunchy? ›

In an airtight container, they become quickly exposed to condensation, triggering an earlier than necessary demise. Therefore, cucumbers will last longer if you store them, dried and wrapped, in a mesh produce bag or something that allows for a bit of airflow.
