With football season starting up, I will be making “football snacks” every weekend, a tradition in our house since my boys were young. Although football snacks are notoriously greasy and unhealthy, I’ve been trying to “healthify” our weekend snack fare the past several seasons while keeping them tasty and satisfying.

Last football season, I came up with a healthier version ofHot Buffalo Chicken Dip, and today, I tried a Hot Black Bean Salsa Dip, based on a hot layered Mexican dip I had years ago at a friends’ house. Although I still remember how good that dip tasted, I can only imagine how many calories were in each scoop.


This Hot Black Bean Salsa Dip takes all the flavors from the Mexican dip I so fondly remember, and mixes them into a single base layer. Melted with some shredded cheese on top, your guests won’t feel they’re missing out on anything. My little guy absolutely loved this dip. Although I served the Hot Black Bean Salsa Dip with tortilla chips, other whole grain dippers or crackers would go really nicely.

In my post last week, I wrote about Whole Grains Month, which is being celebrated the entire month of September. I had an ear of grilled corn leftover and fresh tomatoes from the farmer’s market so that’s what I used. However, you can use frozen corn and boxed/canned diced tomatoes when these vegetables are not in season.

Printable Recipe

Ingredients:

  • 1 tablespoon olive oil
  • One medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 1/2 cups cooked black beans, or one 15-ounce canned black beans, rinsed and drained
  • 1/2 cup corn kernels
  • 1/2 cup tomatoes, chopped
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon Spanish smoked paprika
  • 1/4 teaspoon ground chipotle powder
  • salt to taste
  • 1/2 cup shredded low-fat organic cheese

Directions:

  1. Preheat oven to 350 degrees.
  2. Heat oil in a large skillet.
  3. Saute onions and garlic for 1-2 minutes until onions are softened.
  4. Add black beans and cook another minute or two until warmed through. Mash lightly with the back of a large spatula.
  5. Add corn, tomatoes, oregano, cumin, coriander, smoked paprika, chipotle powder and salt to taste.
  6. Cook for 2-3 minutes until vegetables are warmed through.
  7. Spoon contents of pan into a pie pan.
  8. Sprinkle cheese on top.
  9. Bake until cheese is melted, about 15 minutes.
  10. Serve with organic corn tortilla chips or whole grain crackers.

    The dip looks really good ^^ My mom&dad never host football parties or eat dips (except when we're at my cousin's, which is approx. twice a year)
    My favorite whole grains are: spelt & whole grain/wheat and quinoa…if that is a grain 🙂
    What My favorite whole grain recipe is: I don't know, I like a lot of recipes! Maybe one with chocolate? Or carrots ^^
    How I plan on adding more whole grains to my daily diet: by eating less white flour, or avoiding it completely and focus on more whole grains. I find white bread to be very dry sometimes…

    Quinoa is one of my favorites too, and you're right Sylvie, it's not actually a grain, it's a seed, related to leafy green vegetables like spinach and Swiss chard.

    Lucky me, I love Dr. Kracker crackers. I always try to use whole grains but I guess my favorite would have to be using whole wheat flour in pancakes. No one knows the difference and I like the extra flavor it provides. Thanks!
