Low Carb Shortbread Cookies - Keto Friendly Recipe (1)

I am so excited to share myLow Carb Shortbread Cookies – Keto Friendly Recipe I just made! Guys, you can have cookies on the Keto Diet!!! Shortbread cookies are my absolute favorite! These cookies have the same texture and the same buttery flavor!!! They pretty much melt in my mouth!

I used to top my shortbread cookies with a light vanilla frosting. I haven’t attempted anything that technical on the keto plan yet but if I do I will be sure to let you know. I feel like I am open to a new world of possibilities when cooking and baking keto style!

I’m so excited to try new recipes I can hardly contain myself! Wanna know the best part??!! I get to make all the mistakes and you guys only get the final recipe! I will show photos of our failures though. For example, we tried this exact recipe with coconut flour and that’s a big no-no. It was a mess and the ingredients never came together. We even added cream cheese and sour cream. We wasted so many ingredients testing different flours on this one. See our failure photo at the very bottom of this post.

Let me tell you how to make these low carb shortbread cookies! It only takes four ingredients and about 15 minutes to whip up the dough! You will need some cookie cutters and a rolling pin though. These cookies bake best if they are rolled out.

There is a printable recipe at the very bottom of this post!

Roll out the dough between two sheets of waxpaper to avoid sticking. I like to roll them out to about 1/3 inch thick. You can make them as thin as you want them. This dough recipe will not flatten when it cooks. It will hold it’s shape.

Bake these cookies for about 12 minutes on the top rack. If you do roll the cookies thinner you will want to bake them at a shorter timeframe. They may only take between 8 and 10 minutes if they are really thin. I personally prefer these cookies a bit thicker. They are delicate cookies and easier to handle when they are thicker.

Allow these cookies to completely cool before you pick them up. They will harden up after they cool down.

FAQs

Why are my keto cookies crumbly? ›

Crumbly cookies are usually a result of the cookie dough not binding properly. To fix this, you can add an extra egg, or binders such as some xanthan gum or guar gum, psyllium powder or flax meal.

How many carbs are in keto butter cookies? ›

These Keto Butter Cookies are made in 15 minutes, require only 5 ingredients, and have less than 1 net carb each! So, they're incredibly simple and easy to make.

What is the difference between shortbread cookies and sugar cookies? ›

The main difference between these two cookies is the ingredients and the ratios of the ingredients. Sugar cookies typically contain eggs, while shortbread cookies do not. Shortbread also has a higher ratio of butter to flour and are usually more crumbly and tender as a result.

What is the secret to keto baking? ›

Go soft. If you're baking with Keto Wheat Flour, stick with baked goods that are soft or moist, rather than hard or crunchy, because that's where this flour really excels. (Meanwhile, it doesn't really yield a crisp texture.) For instance, it's better for soft chocolate chip cookies rather than crunchy shortbread.

Why can't you use baking powder with almond flour? ›

Since baking powder contains baking soda, baking powder cannot be used in almond flour baking. Instead, eggs (or applesauce or bananas) can be used as the leavening agent to help baked goods rise and achieve a light and fluffy texture.

Will one cookie ruin ketosis? ›

That depends on the cookie. And also on what else you're eating that day. Generally, people have to eat under 50 grams of carbs per day to achieve ketosis. And eating all those carbs at once is likely to kick you out of keto.

Which butter is good for keto? ›

Grass-grazed raw butter may be one of the healthiest dairy products on a ketogenic diet menu. Grass-grazed raw butter is basically pure raw fat; it has zero carbs, zero sugars and zero grams of protein.

Can you eat unlimited butter on keto? ›

Yes, practitioners say that butter is okay to consume on a keto diet because it's high in fat and low in carbohydrates. It's among the most popular sources of healthy fats, helping you meet your daily macros.

How many keto cookies can you eat a day? ›

Bottom line: Enjoy them as a treat, not breakfast

"I would recommend consuming one cookie per serving and treating these like a treat—not a meal—in a pinch," Shapiro says. The keto diet is about eating high-fat foods for their satiating effect, so you're better off eating something more wholesome for your morning meal.

What are common mistakes when making shortbread? ›

The most common mistakes when making shortbread are over-working the dough, and incorporating too much flour. The less you work the dough, the more crumbly and melt-in-your-mouth your shortbread cookies will be.

Should butter be cold or room temperature for shortbread? ›

If it's too warm, the butter and sugar cannot properly cream and the cookies will taste dense. Many shortbread recipes call for cold butter worked into the dry ingredients and that gives you a wonderfully flaky cookie but if not mixed properly, the results can be inconsistent.

What is shortcake vs shortbread? ›

This buttery delight uses baking powder to help it rise, giving it a fluffy consistency. Shortcakes are often split and topped with strawberries and cream. Shortbread is similar to shortcake but doesn't include baking powder. Lots of rich butter gives shortbread a high fat content, resulting in a fine, crumbly texture.

How many calories are in a homemade shortbread? ›

There are 40 calories in 1 Shortbread Cookies.

Does shortbread have a lot of sugar? ›

Shortbread or shortie is a traditional Scottish biscuit usually made from one part white sugar, two parts butter, and three to four parts plain wheat flour. Shortbread does not contain any leavening, such as baking powder or baking soda.
